Jars of Summer

I have started posts several times over the past few months, but life job keeps getting in the way. In July, I did squeeze in a trip to the North Georgia mountains for a little R&R. On my vacation, I managed to relax in between bouts of canning. This first picture is a sampling of the goodies I made around the July 4th holiday and when I returned from the trip. Pickled okra, spicy dill pickles, peach honey butter, blueberry maple pecan conserves, pepper jelly, corn salsa, and blueberry lemon jam. That is not all I've made. Make the jump and see what else is stored in my kitchen cabinets...

These three jars are blueberry butter made in the slow cooker, blackberry syrup and I have to be honest, I am not sure what the third jar contains. I'll have to get back to you on that...
Before the blueberries were in season, the strawberries were fresh and plump. So, these jars contain strawberry basil, strawberry mint, and strawberry jalapeno preserves. My landlord says he just eats the strawberry jalapeno preserves by the spoonful right out of the jar. If I get him hooked, maybe I can barter a jar for a break on my rent...
At some point, my mom came to town and we spent the weekend making pepper jelly. My mom took the hard job and chopped all the jalapenos. Last time I tried pepper jelly, I gave myself a jalapeno facial. I do not recommend you add this to your beauty regimen. Looks like I have not taken any pretty pictures of those jars of  but this is one of the batches in the pot. I love how colorful the peppers make this jelly. It looks like confetti suspended in golden deliciousness. I'll try to take some pictures and show you the finished product. 

I think this is enough rambling for one post. I do have a few more jars of goodness to share. Even a recipe or two. Now that school is back in full swing, I should be able to post sooner than later.

  1. Oh Sally, you are truly inspiring...I'm not inspired to start canning, but I'm definitely inspired to eat some of your tasty treats! My birthday is in May...
